Using the data below, calculate the contribution margin for each item, classify them using the menu engineering matrix (Star, Plowhorse, Puzzle, Dog), and recommend a psychological strategy for the 'Truffle Risotto'.

  • Profitability: Total CM = (£10100) + (£1530) + (£8120) + (£525) = £1000 + £450 + £960 + £125 = £2535. Average CM per unit sold = £2535 / 275 = £9.22. Items with a CM above £9.22 are 'High Profitability'.

  • Chef's Burger: High Popularity (100 > 48), High Profitability (£10.00 > £9.22) -> STAR. Maintain its quality and visibility.
  • Truffle Risotto: Low Popularity (30 < 48), High Profitability (£15.00 > £9.22) -> PUZZLE. Needs a sales boost.
  • Fish & Chips: High Popularity (120 > 48), Low Profitability (£8.00 < £9.22) -> PLOWHORSE. Popular but not very profitable.
  • Vegan Bowl: Low Popularity (25 < 48), Low Profitability (£5.00 < £9.22) -> DOG. Consider removing or re-developing.

Step 4: Recommend a strategy for the 'Truffle Risotto' (Puzzle).

  • Goal: Increase sales volume without reducing its high profit margin.
  • Psychological Strategy: Apply menu design principles.
    • Repositioning: Move the 'Truffle Risotto' to a prime location on the menu, such as the top-right of the 'Golden Triangle', to increase visibility.
